Real Mayonnaise

I was surprised to find that mayonnaise lasts forever in an unopened jar. Ideal to add to our stored goods.

However, mayonnaise shouldn’t last that long as it contains eggs. Products containing eggs don’t last that long normally so is it something that is put in it?

American recipe
Mix 100ml of sunflower oil and 100ml of olive oil.
Put contents of one egg in a processing bowl.
Add a tablespoon of lemon juice.
A tablespoon of French mustard.
Half a tablespoon of salt
Half a tablespoon of sugar.
50ml of the oil mix.

Process at max speed for 10 seconds.
Stand for 10 seconds.
Process at medium speed and add the remainder of the oil in through the top.

It will slowly thicken, when it reaches the right consistency, about 30 seconds, stop the processor.
Scrape the sides to put the mix in the bowl.
Process at medium speed for a further 5 seconds.

French recipe
Substitute 3 egg yolks for the one egg.
Process as before.

Move to jar and store in fridge.

Both these mixtures will store for up to a week in the fridge.

So it is not what we put in it when you make it then. MMmmm. Makes you wonder what preservatives and other chemicals the manufacturers put in their product that makes it last forever. In my opinion a very good reason for not adding it to your stores actually.

    Yes, mayo last forever. I called BEST Foods over there mayo and the girl told me until it is opened it is just fine. The only reason that I keep oodles and bunches of it is for egg substitute in cakes and such. It is easier to acquire, from the store ya know.
    Still have to figure out if all goes down how I will keep the opened jar cold.

    Even in the olden days there was refridgeration. In a pond, for example. I’m sure there will be a way. It isn’t like it is a very big jar either so I suspect it will not be a major issue.

    When I was out in my motorcaravan once, I opened a jar then forgot about it. When I found it again several weeks later, it was still fine. I ate some myself as a test first, and I suffered no ill effects.

    I’m not sure how long it would last in hot weather, though.

      To keep items cool, build a square wooden frame, (small or as large as you need) cover with fabric and keep wet, the evaporation of the water will keep the interior cool. Water is the only drawback in an emergency lol.

    I don’t like the stuff so my jars will last forever, or until the glass wears out anyway.

    OK – so homemade mayo is not good for keeping in emergency stash but a glass jar of processed stuff lasts forever due to the preservatives, right? So why do the preservatives keep eggs longer than say meat or beans when canned or bottled?

    @Ellen, Have you made cakes with mayo when there’s isn’t an emergency? I’m curious as to how they taste and what sort of recipe you’d use?
